The Raw Cookie Dough Recipe That's Safe to Eat

When I’m feeling like a sugary snack, I’ll admit it, I like to satisfy the craving.  But I know sugar isn’t the best fuel for my body, so I’m always looking for more nutritious alternatives to my favorite indulgences. Sometimes that’s ‘NICE’ cream and sometimes it’s an alternative to fried nacho chips, but most recently it’s these edible cookie dough bites from healthy hacks expert Anneka Eats. They’re made of just three natural, whole ingredients, and are the perfect size for sharing with your BFF’s – if you can resist not eating them all yourself. Come on, in-dough-lge with me.

Ok, I’ll leave the puns at home. But what I won’t leave at home are these tasty treats. Keep reading for the full how-to:

 

 

Ingredients
  • 1 cup packed date (pitted)
  • 1 cup almonds (or cashews or peanuts)
  • 1 1/4 cup almond flour

 

Directions

Process the dates in the food processor until they’ve been combined (about 1 minute), then transfer to a bowl and set aside. Add the almonds and almond flour to the food processor and pulse until combined (about 30 seconds). Add the dates back into the food processor and blend again until everything comes together to form one dough. This will take 5-10 minutes. If clumps of the mixture get stuck, scrape down the edges and move the dough around by hand. Once everything had combined and the mixture is soft and gooey, scoop about 1 tbsp out and roll into balls. Next, roll the balls in hemp seeds or coconut flakes to coat them, then store in the refrigerator until you’re ready to eat! But let’s face it, these won’t last long.
